seguran\u00e7a para <em>Listeria monocytogenes<\/em><\/strong><\/p><p>\u00a0<\/p><p>A legisla\u00e7\u00e3o alimentar da Uni\u00e3o Europeia foi recentemente atualizada com a publica\u00e7\u00e3o do Regulamento (UE) 2024\/2895, de 20 de novembro, que altera o Regulamento (CE) n.\u00ba 2073\/2005 no que diz respeito \u00e0 <em>Listeria monocytogenes<\/em>. Este regulamento introduz altera\u00e7\u00f5es significativas no controlo desta bact\u00e9ria, nomeadamente nos alimentos prontos para consumo, exceto os destinados a lactentes e a fins medicinais espec\u00edficos.<\/p><p>\u00a0<\/p><p><strong><em>Listeria monocytogenes<\/em><\/strong><\/p><p>A <em>Listeria monocytogenes<\/em> \u00e9 uma bact\u00e9ria patog\u00e9nica amplamente distribu\u00edda no ambiente, podendo ser encontrada no solo, na \u00e1gua e em mat\u00e9rias-primas utilizadas na produ\u00e7\u00e3o de alimentos. Destaca-se pela sua capacidade de sobreviver e multiplicar-se em condi\u00e7\u00f5es adversas, como temperaturas de refrigera\u00e7\u00e3o e ambientes com baixa atividade de \u00e1gua, o que representa um risco significativo para alimentos prontos a consumir, como carnes fatiadas, queijos, saladas embaladas e produtos \u00e0 base de peixe.<\/p><p>A infe\u00e7\u00e3o causada por esta bact\u00e9ria, conhecida como listeriose, pode ter consequ\u00eancias graves, especialmente em grupos de risco como idosos, gr\u00e1vidas e pessoas imunocomprometidas. A listeriose pode manifestar-se sob diferentes formas, desde sintomas gastrointestinais ligeiros at\u00e9 infe\u00e7\u00f5es invasivas, como septicemia e meningite.<\/p><p>\u00a0<\/p><p><strong>O que mudou com o Regulamento (UE) 2024\/2895?<\/strong><\/p><p>Os limites microbiol\u00f3gicos para dete\u00e7\u00e3o e controlo desta bact\u00e9ria (100 ufc\/g e &#8220;n\u00e3o detetado em 25 g&#8221;) nesta categoria de alimentos mant\u00e9m-se, mas estes crit\u00e9rios passam a ser aplicados ao longo de todo o per\u00edodo de vida \u00fatil do produto.<\/p><p>O crit\u00e9rio de 100 ufc\/g aplica-se quando o operador da empresa alimentar conseguir demonstrar, \u00a0a contento da autoridade competente, que os n\u00edveis de <em>L. monocytogenes <\/em>n\u00e3o ultrapassar\u00e3o esse limite at\u00e9 ao final da vida \u00fatil do alimento. Para garantir que esse limite n\u00e3o seja excedido, podem ser estabelecidos limites operacionais durante o processo produtivo.<\/p><p>J\u00e1 o crit\u00e9rio &#8220;n\u00e3o detetado em 25 g&#8221;, que anteriormente se aplicava apenas enquanto o alimento estava sob o controlo direto do operador da empresa do setor alimentar que o produziu, passa a ser aplic\u00e1vel durante toda a vida \u00fatil do alimento, quando o operador n\u00e3o consiga comprovar que os n\u00edveis de <em>L. monocytogenes<\/em> permanecer\u00e3o abaixo de 100 ufc\/g at\u00e9 ao final do per\u00edodo de vida \u00fatil.<\/p><p>Estas altera\u00e7\u00f5es ser\u00e3o aplic\u00e1veis a partir de 1 de julho de 2026, assegurando a adapta\u00e7\u00e3o da ind\u00fastria alimentar e a implementa\u00e7\u00e3o eficaz das novas normas.
